Roasted Chicken Breast with Vegetable Quinoa

4 chicken breasts
2 cups quinoa
4 cups water
1/3 cup zucchini
1/3 cup yellow squash
1/3 cup yellow corn
1 Tbsp. extra virgin olive oil
Prepare quinoa according to package directions. Wash zucchini, squash and corn thoroughly. Dice zucchini and squash into small pieces. Remove corn husks and cut kernels from cob. Saute' the vegetables in half the olive oil, then mix the quinoa. Heat olive oil in a pan and brown chicken on each side. Finish chicken in oven for 15 minutes at 375 degrees.
