Apple Brown Betty

4 cups fresh bread crumbs
3 1/2 Tbsp. margarine
4 Fuji apples, peeled, cored and thinly sliced
1/3 cup Splenda
Splash of molasses
1 Tbsp. fresh lemon juice
1 Tbsp. freshly grated ginge or 1 tsp. ground ginger
1 Tbsp. cinnamon
Heat oven to 375 degrees. Lightly grease a 2-quart casserole or baking dish. Stir together bread crumbs and margarine, set aside. Combine apples, Splenda, molasses, lemon juice, giner and cinnamon, mixing until well blended. To assemble: Spread 1 cup bread crumb/margaine mixture and remaining apples. Cover with foil and bake for 30 minutes. Uncover and bake 30 minutes longer. Cool until warm and serve. - Chef Arthur Gordon, Irregardless Cafe in Raleigh
